ELLAGIC ACID, a dimer derivative of gallic acid, is a kind of natural polyphenolic compounds, widely occurring in pomegranate, raspberry, strawberry, blackberry, walnut, wolfberry and other soft fruit and nut plants. In addition, ellagic acid can also prevent and treat inflammation, diabetes complications, hypertension, asthma and other positive diseases, its antioxidant and whitening effect is also widely used in cosmetics, but its solubility greatly limits its use.

Cyclodextrins are often used as inclusion materials because of their "hydrophobic inside and hydrophilic outside" cavity structure. Inclusion technology, in which one molecule is encapsulated in a cavity structure of another molecule to form an inclusion complex, is often used in the preparation of drugs. The inclusion compound formed can improve the solubility of drugs, powder and prevent volatile liquid drugs, regulate the release rate of drugs to improve the bioavailability of drugs, mask the special smell of drugs and increase the stability of drugs. When hydroxypropyl betadex was used to encapsulate ellagic acid, the superoxide anion radical scavenging ability of the encapsulated compound was the best, and the solubility of the encapsulated compound was increased by 102%, which was better than that of monomer ellagic acid. It also indicated that encapsulated ellagic acid could improve the solubility and antioxidant activity of ellagic acid.
